Easy Summer Cocktails

I'm all about refreshing cocktails in the summer (or anytime really). But, what I really look for is something that is quick, simple and light. Below are my all time favorite drinks (with exception to the toasted coconut marg, only because I haven't tried it yet but it's bound to be a top contender). What are your favorite summer cocktails and recipes? 

via A Beautiful Mess:   1 ounce cream of coconut //   1.5 ounces 1800 Silver Tequila //   1 ounce Cointreau //   3 ounces lime juice //  1 ounce simple syrup // 3 ounces coconut milk // 1 splash half and half // sweetened coconut flakes

Just looking at this picture makes me drool. If you haven't tried a Moscow Mule, add it to your list THIS WEEKEND. 2 oz vodka // 1/2 oz lime juice // 4 oz cardamom ginger ale // lime wheel and pinch of ground cardamom for garnish

I absolutely love a good, classic mojito. But, if you wanna add a little summery spin to it, switch out your basic rum for coconut rum, yum! What you need: 6 mint leaves // 1 lime, cut in half // 1-1/2 teaspoons Truvia Spoonable (I prefer simple syrup) // 2 ounces coconut rum // Ice // Seltzer water

Homemade Ice Cream

I managed to lock myself out of my car last week but luckily I was in a shopping center with Chipotle AND Tuesday Morning (score!). So while I waited for the Boyfriend to give me a lift, I couldn't help but do a little shopping. Whilst perusing, I came upon an ice cream maker, just in  time to carry on a 4th of July family tradition!

I thought the safest bet was to stick with the simple vanilla recipe included with the ice cream maker. it was mouthwatering and only called for 4 ingredients!

The  Big Boss  ice cream maker worked like a BOSS! After freezing the inner bowl, which you can do ahead of time (takes around 12 hours) it only takes about 25 minutes to whip up some fresh ice cream!

Have you tried your hand at homemade ice cream? What are your favorite flavors/recipes to make? I have a feeling this machine will get a lot of use in the future, just thinking about it makes me feel 5 pounds heavier. Time to look for low fat recipes!
